Strawberry Ambrosia Muffins

1 cup sliced fresh strawberries
1/2 cup shredded sweetened coconut.
3/4 cup sugar
3/4 cup milk
1 large egg whites
1/3 cup vegetable oil
2 teaspoons vanilla extract
2 1/3 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon fine salt
1/2 cup chopped walnuts.

1.Preheat oven to 350 °F and grease or line muffins tins with paper cups.
2.Toss strawberries with 2 Tbsp sugar and set aside. In a large bowl mix together milk, egg whites, oil and vanilla together. In a separate bowl, sift flour,granulated sugar,coconut baking powder, cinnamon and salt. Stir dry ingredients. Fold in strawberries and spoon into muffin cups. Bake for 20 to 25 minutes, until a tester inserted in the center comes out clean. Allow to cool for 15 minutes before turning out.
